Chocolate Nut Melts

This will be your favourite snack! A regular feature at  ‘The Pause’ and Retreat to the Sea, these treats are a crowd pleaser. Any combination of nuts and chocolate is a winner for me. These parcels are just the right size; the nuts provide a source of healthy Omega 3 fats, dark chocolate provides antioxidants and honey coupled with dried fruit give them the right amount of sweetness. Originally from one of my favourite cook books “Eat Up Raise Your Game” by Daniel Davey.

Ingredients

200 grams mixed nuts chopped

30 grams mixed seeds

3 tbsp dried cranberries or raisins

Pinch flaky sea salt

100 grams dark chocolate (at least 74% cocoa solids)

2 tbsp honey

3 tbsp crunchy peanut butter (use 100% ground peanut with no additives)

1 tbsp coconut oil

Method

  • Separate fairy cake cases and spread onto baking tray ( I use small silicone cases)
  • In a medium sauce pan over low heat combine chocolate, peanut butter, honey and coconut oil until melted
  • Add to the melted mixture the nuts, seeds, dried fruit, and salt
  • Mix well making sure the dry mixture is coated in the melted chocolate mixture
  • Use two teaspoons to portion mixture into cases
  • Transfer to refrigerator for approx an hour to set or fast track by putting into freezer
  • Store in an airtight container

Serve

Yields approximately 18. It is so handy to have a batch of these in the fridge! Perfect for a pre-workout boost or  serve to guests with a cup of coffee or tea.
